    Pancakes

    Ingredients:

    3 eggs
    3 tbsp coconut oil/ butter (melted) 
    3 tbsp coconut flour 
    3 tbsp almond milk (or any milk of your choice) 
    1/4 tsp baking powder
    Pinch of salt

    ​

    Whisk and it's ready to go on a pan. 

    Makes 4 good sized pancakes

    Homemade Muesli

    Ingredients:

    200g Sunflower seeds

    100g Sesame seeds 

    200g Pumpkin seeds

    100g chopped Almonds 

    100g chopped Macadamias 

    100g Shredded Coconut/Coconut Flakes 

    Liquid Stevia/Natvia (to taste and Optional ) 

    Cinnamon (to taste) 

     1 tbsp Vanilla essence 

    1-2 tbsp coconut oil 

    ​

    Toast in a pan with coconut oil until brown. Leave to cool and store in a cool place. 

    Have it with some yoghurt and/or berries. 

    Brownies

    Ingredients: 

    445g of mashed pumpkin

    90g of protein powder 

    1/4 cup raw cacao 

    1/4 cup Natvia 

    2 eggs 

    1/4 cup coconut flour 

    1 tsp baking powder 

    100g walnuts. 

     

    1) Steam pumpkins till tender and the puree it until smooth. 

    2) Add in eggs 

    3) Add in rest of the ingredients. 

    4) Bake in oven at 180 degrees Celsius for 50-60 mins.

    Banana Muffins or Loaf 

    Ingredients:

    1 medium- large banana (150-200g mashed banana)

    1/3 cup melted butter

    1 tsp vanilla essence

    3 eggs

    1/4 cup unsweetened almond milk (or any milk of choice)

    2/3 cup almond flour

    1/3cup coconut flour

    1/2 tsp salt

    1 tsp baking powder

    1/4cup Natvia (optional- for extra sweetness)

    1/2tsp Xanthan gum (optional- for bready texture)

    ​

    1. Mix together wet ingredients: Mashed banana, butter, vanilla essence, eggs, almond milk.

    2. Add wet ingredients to dry ingredients (almond flour, coconut flour, salt, baking powder, Natvia, Xanthan gum).

    3. Mix all ingredients together.

    4.Pour into lined/oiled muffin pan. Makes 12

    Cookie Cups 

    Ingredients:

    200g Almond Meal 

    4 eggs 

    2 tbs Natvia Sweetener 

    1 tbs butter

    2 tsp Cinnamon 

    150g dark/sugar free chocolate chips 

     

    Mix all ingredients together and place in ramekins. 

    Cook at 180 degrees for 15 minutes
